It seems a lot easier if you set your pace to grueling.

You travel much more per day, so that means less rounds, which means less food eaten and less rounds for some random horseshit to happen to you. Like I used way way less food by the time I made it to oregon, and given that, it made hunting for animals actually worth it because 100 food went longer. The only downside is your health suffers, so you just need to rest every now and then.
